First confirm you have run the database update and the version matches WooCommerce. You can rerun the update from WooCommerce > Status > Tools.
It’s also possible that was caused by either a conflict with your theme or with another plugin.
The best way to determine this is to:
- Temporarily switch your theme to Storefront
- Disable all plugins except for WooCommerce
- Repeat the action that is causing the problem

With inventory management de-selected you will be able to flag the item as out of stock.

This works independently of the pricing so should fix your issue.

Other options are to reach out to the theme developers, or use CSS to change the colors.

Yes Hestia is a common theme, however sometimes themes need to be updated when a WooCommerce update is released to respond to changes in the code.
