It seems something is wrong then if you’ve disabled all the checkout fields but they still show up on the checkout page. Have you tried some troubleshooting like disabling all non crucial plugins and temporarily switching themes to see if then the Checkout Field Editor plugin works as you expect it?
Hi there,
Were you needing to do something specific with reports, or just to contact customers that have bought something? I’m just wanting to figure out the end goal and see what we can best do to get there. 🙂

For your color combination needs, you may need to keep tweaking the settings. Alternatively, to get exactly what you are after, you can customize the email templates and specify what each bit will look like.

Ahh, that’s no good. Those versions really are sub par, especially MySQL. Nonetheless, I hope the SSL certificate helps the Stripe issue.
If that isn’t a fix there could be a conflict somewhere and it may likely be in the theme. You could confirm that by temporarily switching themes to see if Stripe works in live mode.

I do think variations are the best way to go about this, since they are indeed variations of the core product and not add-ons at least to me. 🙂
Variations let you appropriately track stock, taxes, images, etc… where an add-on won’t have all these features.

If I can ask, are you wanting to use the Chrome Payment / Google Pay but just disable Apple Pay?
If you don’t want Chrome Payment Requests either you should be able to make that notice stop appearing by disabling this in your Stripe settings.

With Flat Rate I believe you’ll want to remove the base cost and only use shipping classes to setup rates.
Link to image: http://cld.wthms.co/Cz0MMGOtherwise, the shipping class costs are added in addition to the base Flat Rate charge. You could make this simpler as well and just set the base cost to $2.50 and then use one shipping class for all your normal products. That class charges another $2.50. That way if they order normal products they’d get a $5 total charge, then if they order the small item it’s only $2.50. Doing it that way just uses one class instead of two.
Just to be sure to set the last option, Calculation type, appropriately as well for your store.

Could I ask what this is for? I assume it needs to tie into something like local pickup or perhaps it’s something else like a bookable product?
