So sorry for only getting back to you now.
Please advise if you have changed the excerpt length under ‘Testimonials’ -> ‘Settings’ on the ‘Options’ tab?
The ‘Read More’ link wont show if the excerpt length is longer than the number of words available though. Would you prefer for it to show anyway?

At the moment the plugin strips out most of the HTML tags in the body of the testimonial. We will definitely add the option to allow HTML in a testimonial in the next release.

You can insert the signup widget on your site using the following shortcode:

In PHP, you will use the following code:

Are you referring to the settings that are not saving?
Please confirm you have checked your Spam/Junk folder for the notifications?
Would it be possible to find out from your hosting company if the mail() function is available on your hosting package, as our plugin uses wp_mail() (which relies on the mail() function to exist) to send out the notifications.

Unfortunately it is not possible to change the ‘Written by’ text without changing it in the code. (I can assist you with this if you are comfortable in doing this).
We will be sure to add this into the next update we release though.
