You can certainly do this, with either a bit of custom code (this will help you get started) or a plugin such as WooCommerce Login Redirect (although there may be more recently updated plugins available for this).

Rather than deactivating all WooCommerce related plugins, please make sure that all plugins except WooCommerce have been deactivated.

While there isn’t a limit on how many variations a product can have that’s imposed by WooCommerce itself, it does very much depend on what your server can handle. In your case, it sounds like your server is having a hard time keeping up with the large number of variations.
Can you tell us a bit more about why you need as many variations? We may be able to provide an alternative to the kind of setup you have now.

The best way to determine this is to:- Temporarily switch your theme to Storefront
- Disable all plugins except for WooCommerce and the Facebook plugin
- Repeat the action that is causing the problem
This is best done on a staging site. That’s a copy of your live site, so you can test things out without making changes to your actual site. Some hosting companies offer a staging site service within their hosting plans. If yours does not, there is a great free plugin that will allow you to build a complete staging site with a few button clicks: https://wordpress.org/plugins/wp-staging.
If you’re not seeing the same problem after completing the conflict test, then you know the problem was with the plugins and/or theme you deactivated. To figure out which plugin is causing the problem, reactivate your other plugins one by one, testing after each, until you find the one causing conflict. This kind of problem is usually caused by a conflict with your theme or with another plugin. You already did a great job on the conflict test you’ve done so far, but I’d recommend doing a full test to make sure.
The best way to do this is to:- Temporarily switch your theme to Storefront
- Disable all plugins except for WooCommerce, even the ones you don’t think matter.
- Repeat the action that is causing the problem
This is best done on a staging site. That’s a copy of your live site, so you can test things out without making changes to your actual site. Settings → General?You mentioned not being able to change the server timezone. Is there a particular reason for that? There’s reasonable suspicion that the problem lies with your server settings, and getting in touch with your hosting company may not be a bad idea.
