It would help to get more details about how to reproduce the issue. What you described sound oddly specific (“the number of products returns to 11”) – so I’m wondering what steps should we take if we were trying to reproduce the same behavior on a site of our own.
I use Genesis framework with a child theme designed by me.
Issues like this can often be caused by conflicts with your theme or other plugins. So, it’s always a good step to check against first.
Here’s what I’d suggest:
1. Switch the theme of your website to the free Storefront theme.
2. Deactivate all the plugins except for WooCommerce and WooCommerce Blocks, then check if the issue persists. If the problem is resolved then please move on to the next step.
3. Activate features one by one while testing for the issue, until you find the one that is causing this behavior.
We recommend that these steps are taken on a staging site, which is a clone of your live site that you can modify without risking making any permanent damage to your live site. You can create it using a plugin like WP-Staging. This plugin lets you copy and redeploy a WordPress site with minimal work.

In reply to: [WooCommerce] miniaturas ruinsYes, ”Action Figure Broly” notice the difference in the image, before clicking “see options” and then on the product page, the thumbnail image before clicking “see options” is blurred, but after clicking, and being directed to the page the image appears in a much better quality.

Perhaps I’m missing something, but it appears as good quality to me.

Which does seem to be less sharp. However, if I look at the original image that was uploaded (here), I can see the same thing: the image is not fully sharp.
So, it looks like this is a case of the quality of the original image not being ideal; or there being too much compression on the image. Are you using any special tool to compress or optimize images on the site?

Based on the above, it sounds like you’d like to offer customers a few options for products that they can add to their order, right from the product page. Is that correct?
If so, there’s this other extension called Composite Products, which allows customers to create customizable product kits.
I know you mentioned you are not to keen on buying WooCommerce.com extensions, but I thought I’d mention this one in case it might help.
