I tried to replicate the issue and it looks like you were right, the sub-menus are not being shown on older versions of Microsoft Edge.
I will open an issue on GitHub and the issue will be solved in the next update.

Your solution should work. However, while checking your website on mobile I saw an arrow that shouldn’t be there.
You can hide it using the following code:
.woocommerce .down-arrow–bubble {
display: none;

We have prepared a beautiful experience to setup the theme via the Pixelgrade Assistant plugin (https://wordpress.org/plugins/pixelgrade-assistant/). Install it and you will find the demo data (starter content) import.
You should have been prompted on theme activation about it.
