If you want to noindex tag pages, you can do so by going to SEO > Search Appearance > Taxonomies > Tags, then toggle the option “Show Tags in search results?” to No. More information here.
As for your other concern, please create a new thread so it can be addressed properly. Per the WP forum policy, we can only address one issue/topic per forum thread.
If ever you want to try it again and still encounter the same issue, let us know so we can investigate a little further.

Yes, it does work with categories and tags. Even with custom taxonomies (public). The plugin won’t be able to detect any private custom taxonomies.

If your staging site is set up exactly as your live site but the issue doesn’t occur there, it could just be a caching issue. Have you tried clearing all your cache from your caching plugins, server, CDN like Cloudflare, or your browser?

We’re unable to replicate this issue on our end. With just Yoast SEO and WooCommerce running, together with the Twenty Nineteen theme, everything looks right. Have you tried disabling the Realy Simple SSL plugin? Does it resolve the issue?
