I don’t see any plugin that raises a red flag for me, and based on what you’ve described I suspect that you may have run into a situation where the category data got corrupted in the database. It’s hard to tell what the cause of that is, but it’s typically a one-off problem.
For now, I’d do what you already mentioned: create a new category, move the products you want there, and remove the old one.

Wow, that must be frustrating – I’d recommend letting your old hosting provider know about this, as they may be able to take another look at what’s happening and figuring out the cause. There might be must-use plugins in that that are of influence.

This kind of problem is usually caused by either a conflict with your theme or with another plugin.
The best way to determine this is to:- Temporarily switch your theme to Storefront
- Disable all plugins except for WooCommerce
- Repeat the action that is causing the problem
This is best done on a staging site. That’s a copy of your live site, so you can test things out without making changes to your actual site. Some hosting companies offer a staging site service within their hosting plans. If yours does not, there is a great free plugin that will allow you to build a complete staging site with a few button clicks: https://wordpress.org/plugins/wp-staging.
If you’re not seeing the same problem after completing the conflict test, then you know the problem was with the plugins and/or theme you deactivated. To figure out which plugin is causing the problem, reactivate your other plugins one by one, testing after each, until you find the one causing conflict. I’d recommend setting up a custom menu. You can add menus as a widget to the sidebar, and it gives you full control over what categories you display in the sidebar. No need to fiddle with code to hide certain categories – just add the ones you want and use the ‘Menu’ widget instead of ‘Product categories’ one.

Are other emails sending out? The first thing I would check would be to go to “WP-Admin → WooCommerce → Settings → Advanced” and make sure that the endpoint for ‘Lost password’ is set.
If it is, and the email is still not sending out, I recommend installing Email Log to see if the email is triggered at all. If it is, but your customers do not receive it, I’d install an SMTP plugin. You can read more about email issues here: https://docs.woocommerce.com/document/email-faq/
If all else fails, issues like this may be caused by either a conflict with your theme or with another plugin. You can read more about plugin and theme conflicts here: https://docs.woocommerce.com/document/woocommerce-self-service-guide/
The best way to determine if the issue is being caused by a theme and/or plugin is to do the following:
1. Temporarily switch your theme back to the [Storefront](https://woocommerce.com/products/storefront/?aff=10486&cid=1131038) theme (it’s free)
2. Disable all plugins except for WooCommerce
3. Test to see if the issue has been resolved.
4. If that resolves the issue, then slowly re-enable features until you find the one that’s causing the conflict.If it doesn’t resolve the issues, please let me know so that I can help figure out where the problem is coming from.

The easiest approach would be to use the default importer/exporter functionality included in WooCommerce: https://docs.woocommerce.com/document/product-csv-importer-exporter/
With it, you can upload a CSV file that contains all the information on your variable products and upload them in bulk. The documentation I mentioned contains example files you can use as a template.

If you go to WooCommerce > Status, you can select “Get system report” and then “Copy for support”. Once you’ve done that, you can paste it here.
I’d also still like to see a screenshot of the settings I mentioned in my first reply.
