There may be an incompatibility with another plugin causing this. Try running a test email without any other plugins enabled to see if the Domain Check Results will populate. If it comes back and starts reporting correctly, you can turn the plugins back on one at a time, sending test emails in between, until the problem comes back. That should point out which plugin is interfering.

It sounds like the emails are being passed to Gmail successfully. However, if they aren’t arriving, something may be happening between Gmail and the receiving email provider (where the emails are going).
When you send these test emails, are they all going to the same inbox? My reason for asking is that I’m wondering if it may be one address/email service that’s doing this.
Also, are the emails themselves in Chinese? Or is it just the WordPress interface? If the emails are also changing, it may be that the email service is misinterpreting them, possibly even flagging them as spam. In that case, you can check the spam folder to see if they may be getting flagged as such.

When you get a moment, double-check your Google Console settings to make sure the Redirect URI matches what shows in WP Mail SMTP.

If it’s still not connecting, you may need to recreate the connection using the guide in the link above.

Our plugin bridges a connection between your WordPress site and your mailer service. This connection makes it so emails sent by your WordPress site are funneled over and delivered by your mailer service. For instance, if you connect WP Mail SMTP to SendLayer, emails from your site will be sent by SendLayer instead of your web host’s server. This improves the reliability and efficiency of your email to make sure your email lands in inboxes instead of spam folders or being rejected by the server.
Regarding the sending domain and From address, unless you’re connecting to the site’s SMTP server, you’ll be sending from the mailer service you connect to. When it comes to the From address, mailer services have their own requirements. Most want you to send From an address using the domain you register under their service. So for instance, if you register example.com under the mailer service account, you would need to send emails From any @example.com address. Brevo is a bit more flexible in that you can use any From address with it.
