We’re here to assist you with this one.
Could you please check and confirm all set up properly.
1. Go to Admin Dashboard -> Instock Notifier -> Status – check all configured properly. If possible check Test Email Option.
2. Check what is configured in Background Process Engine in our settings page(Admin Dashboard -> Instock Notifier -> Settings -> Background Process Engine Selection) If it is default background process please change it to Woocommerce Background Process and check the flow again.
3. If the mail sent from our end we automatically change the status of subscription from Subscribed Status to Mail Sent Status.
4. We also keep record some log of each activity from our plugin which you can check it in Admin Dashboard-> WooCommerce ->Status -> Logs -> Top right Drop-down find “back-in-stock-notifier” prefix with latest date which has all the info to troubleshoot the issue.

Yes it works for variable products out of stock variations – You have to choose the variation before our subscribe form appear. For some themes/plugins out of stock variations disabled by default, in that case our plugin may not work as expected.
