Basically, removing the NextGEN Gallery and adding the new one doesn’t affect the existing galleries.
However, if you think of not doing so on the live site, please create a staging site (you can contact the hosting service provider) and then make the changes. If everything goes as expected, it can be done on the live site.

You can basically duplicate the ole database and then assign it to new galleries rather than editing it. In-order to do so, please follow the guideline and work accordingly: https://www.wpbeginner.com/wp-tutorials/how-to-duplicate-wordpress-database-using-phpmyadmin/
If you are unable to do from your end, you can take help from the hosting service provider, and they’ll be helping you on this matter.

As mentioned earlier, we couldn’t replicate the issue on our end while using the NextGEN Gallery, I suspect it to be an issue with the theme activated on all the three site of yours.
Could you please try once deactivating the theme Weaver Xtreme and check if it resolves the issue or not!
Also, with the upcoming NextGEN Gallery release, we will be fixing most of the PHP errors appearing with the plugin. So in case it’s related to the plugin, the issue might be resolved once the plugin is updated to the new version.

It seems that you are using the paid version of NextGEN Gallery. If you have an active license subscription with us, could you please submit a support ticket through the NextGEN Gallery account dashboard when you have a chance? For more context, WordPress.org’s goal is to ensure that paying customers and free users get the best support they can, from the ones that can give it.
The WordPress.org forum is moderated by volunteers and as volunteers do not have access to the paid products, they recommend reaching out to the authors of the code, as the issues you are having involve paid gated features, it is better to avoid mixing it with the features of a free plugin or theme.
From there, our support team will be able to take a closer look at your request.

While checking on our setup we couldn’t replicate the issue while using the PHP 8.1 and NextGEN Gallery. I suggest you download a fresh copy of the latest NextGen Gallery and, then replace the one from your site’s Dashboard > Plugins > Add new plugin > Upload plugin > Choose File (with the files’ override when being asked) to see if that’ll fix the issue?
Re-installing NextGen Gallery wouldn’t affect your existing galleries.

I suspect one of the plugins you’re using might be causing the problem, so please try deactivating all the plugins one by one and check if the problem resolves.
If the problem is solved, then, it was caused by one of your plugins. Please reactivate one by one and check after each to find the one causing the problem.

Upon checking, it seems to be an issue from the Elementor plugin rather than the NextGEN Gallery. Could you please try once deactivating the Element Cache on Elementor plugin settings and check if it helps you or not!
In-order to do so, navigate to Elementor > Settings > Features > Element Cache. Deactivate the cache that might resolve the issue.

Thank you for contacting us, I’d be happy to help,
In-order to fix the issue, please ask the hosting provider and ensure that the wp_ngg_pictures > PID is set to auto-increment.
Once that’s done, try uploading some images to any of your galleries and let me know if this fixes the issue.
