So if I got it right, you have WooCommerce automatic emails created with MailPoet, but they’re not sent. Instead, your new customers are listed as Unsubscribed for the WooCommerce Customers list.
Users who didn’t check the opt-in checkbox during checkout will be added as “Unsubscribed” and it’s expected. Your test shows that if the checkbox is selected, you did receive an automatic email.

wp_mailcan be extended in unexpected ways and cause sending issues, so we never used it. Before PHPMail we used a different library to send emails.We made the switch when the underlying library ended up malforming email contents as they were sent to the email client.

if you’re using MailPoet Sending Service, you don’t have to point your SPF record to MailPoet so it shouldn’t create any issues.

You can, however, add DKIM records to your sender domain to improve deliverability: https://kb.mailpoet.com/article/328-set-up-dkim-for-your-sender-domain

What you see is not expected. I tested the same behaviour on my test site and my Post Notification email got sent with a post of a specific category.
Are you using default WordPress posts or some custom post types?
Also, do you see your Post Notification email in the history or it just doesn’t generate any emails at all?
Can you please share some screenshots of your Automatic Latest Content setup and also of your post published?

The cron script should be triggered from the server, not from within the WP Crontrol interface.
Is there any particular reason why you want to use the server-side cron as opposed to the other two cron options in MailPoet > Settings > Advanced > Newsletter task scheduler?
