This is actually a WooCommerce default behavior and we’re using the same.
I’m not sure if there’s an option in WooCommerce to open this link in a new tab.
I recommend to once check with WooCommerce support.

Yes, that’s correct. Global checkout will replace WooCommerce default checkout and should work for all of your store products.
