I figured it out, you have to click on the “Featured Image” button under “Page Elements”. This applies to both posts and pages. I also selected the right side layout in General Page Structure.
You may want to update your instructions, because it doesn’t describe this way of getting the featured image to show.

I was referring to the products below the image, but I guess that’s just the shop page so it would contain the shop’s products.
Hope that makes sense, excited to build out my shop with Sullivan theme.
