It’s likely that the page in question uses a custom template to incorporate that function in the desktop theme. The mobile theme will be able to display that content once it has access to that template’s code. The free version of WPtouch does not offer this capability. WPtouch Pro is built to accommodate advanced desktop theme functionality such as custom post types, custom page templates, and shortcodes.
The latest post listing displays the most recent posts (by date). If this is not occurring in your installation, there may be a Javascript conflict affecting performance.
To verify that your WordPress installation is free of Javascript conflicts, deactivate all except WPtouch from within the WordPress Plugins area, clear your browser cache and local data then test.
If WPtouch functions well, you may then enable the rest of your plugins one at a time, repeating the process, until you can identify which is/are causing the problem.
You may choose to replace the conflicting plugin with another or upgrade to WPtouch Pro which has a feature that will allow you to disable the conflicting plugin within your mobile theme but leave your desktop theme intact.
If the tag is not included in the list of available tags, then it is either not setup as a standard WordPress tag (i.e., it may be a taxonomy item which is unsupported by the free version of WPtouch) or there may be a Javascript conflict disrupting completion of the WPtouch Pro admin functions.

Keep in mind that all core code is replaced on each update. It is recommended to use a copied child theme for any customization of the mobile theme.
it seems like WP Touch is not even loading the templates or functions of the Event Calendar.

You have to enable Advanced settings (at the bottom of Core Settings) to see the option to choose the re-direct location.
It’s not possible— and it’s not recommended.
You don’t want to load large images on mobile, as it’s expensive from a data transfer standpoint. Average WPtouch page weights are well under 1MB, and load fast on mobile devices. Adding regular sized images everywhere could easily see page weights ballon to over 3MB.

Are you running any cache plugins? They may be the culprit if it hasn’t been setup for WPtouch (meaning it will serve cached desktop pages to mobile visitors instead of WPtouch pages).
The reason for this issue is usually another plugin or the desktop theme force loading an older version of jQuery (usually jQuery 1.6 or older).
WPtouch relies on at least jQuery 1.7, released in August of 2012. Since those plugins or themes are force loading a specific version of jQuery, and WPtouch has jQuery code dependent on a newer version of jQuery, WPtouch’s JavaScript code fails.
The “Enable jQuery 2.0” Advanced setting in WPtouch works to solve this issue by replacing the older version with a newer one.
We think all plugins and themes should work with the version of jQuery that WordPress itself ships with. There are numerous articles about why you shouldn’t do this, and that’s why we make the Enable jQuery 2.0 setting an advanced one that’s off by default.
On December 11th 2012 WordPress released version 3.5, which included jQuery 1.8.3. It’s this version that WPtouch relies upon, and I think its reasonable that we depend upon it, since we officially state we support WordPress 3.6 or newer.

You change the re-direct location in Core Settings.

Not the latest version. You can ask WordPress to port a version of the new one over to WordPress.com however. Maybe reach out via Twitter?

The old version certainly didn’t ‘work’ for many people, since it was quite restrictive in how it displayed menu items. You can revert to the old functionality though, however, by instead telling WPtouch to use WordPress Pages instead of a custom menu in WordPress.
Additionally, you can use a separately created WordPress menu to assign to WPtouch for specific use on mobile.
Ultimately WPtouch Pro 3’s menu options are more flexible and work with modern WordPress menu features, so we think it’s an improvement for sure.
