Hello,
The option to rename the shipping methods is not available in the free version.
Premium version has the options to Update Service name, Enable or disabled shipping method, Add handling charges, etc.

Yes, you can manually update the tracking number every month. This tracking details will be send to customers along with Order Completed email.

Creating Label for WooCommerce Subscription Customers is currently not supported by UPS plugin. However you can use the tracking feature in the premium version of the plugin, Tracking details will be send to customers along with the Order Completed Email.

Unfortunately , Free version of the plugin doesn’t have the option to manage the services.

Commercial invoices for the international shipping will be available in the next version of the premium plugin.

Check out our UPS documentation to understand how to set up the plugin. Even though this tutorial is for premium version, to some extend, this tutorial will be relevant for basic version too.
