[contact-form-7 id="804" title="Kontaktformular Example Person"]but then it just writes this text in the fancybox and doesn’t open the formular.I think it’s really the problem of the excerpt field. That’s not really an editor, it’s just to write a little text.

No that doesn’t work.
It’s helpfull to know that I write this code above in the staff excerpt to add to each person a own email formular.
I use theme “Accio”.
When I just add the Contact Form 7 shortcut to this staff excerpt, then it display the text of the shortcut but not the formular. Maybe it’s the problem of this editor of this staff excerpt.
