I got an answer from WooCommerce support, and this is not an issue connected with the plugin “Giftable” but a known issue in WooCommerce.
Actually, Shipping costs display and work correctly in the Checkout screen (just not on the Cart screen), and they display and work correctly in the Cart once a customer has entered an address.
They should fix it with next WooCommerce updates.
So nothing wromg with the Giftable plugin! I have re-installed it!

Indeed, I checked and it works fine on the checkout screen once an address is entered.
That’s fine for me, I will wait for WC 3.5.1 update 🙂
