Create a page called Blog. In the edit view for this page, in the right side bar, you can see “Page attributes”. In that choose blog for the template and save.

Are you able to view the site? What is the site URL?
If the homepage is blank and you are unable to access dashboard, take a backup of your theme through FTP and delete the theme. If this doesn’t help, rename your plugins folder and create a new empty plugin folder under wp-content.

/wp-admin/nav-menus.php
and label it Blog.
Whenever you publish a new post, make sure to update this link. Sorry, I don’t know an automatic way to do this.

One way to do is to create a page called Blog. Set this to use the Blog page template. And then change the “Blog pages show at most” value to 1 at
/wp-admin/options-reading.php
But this would mean that all your category and archive pages will also show only one post at a time.
You can link to this Blog page from your menu.
