You can remove the “Start from and Finish by” option by hiding this field while publishing/editing your booking form in the Pages section: https://prnt.sc/14pq64x. Please check this article: https://support.booking-wp-plugin.com/hc/en-us/articles/212800185-Publish-Booking-Form for more details and instructions in publishing and hiding fields in the booking form.
Regarding time discrepancy, please check the Time zone in the WP settings. It is best to select a city in WordPress’s time zone settings.
