The issue you are having is likely caused by some of the server characteristics which values are not high enough to run WooCommerce site. More info on it could be found below:
Could you please tell us what value you see in

Are you referring to Site Title? If so, you can change it in the WP Admin via Settings > General > Site Title.

There is really no easy way to modify the name of the services. If this is what you’d like to do, you’d need to custom code the solution. Take a look at this thread as it may help:

You can enable and disable the services you want to offer to your customers as shown in the guide below (Live Shipping Rates/paragraph 4):

So if you don’t want to offer
Priority Mail Ratefor example, you can disable it and leave only Flat Rates enabled.>Separately, do I need to define/add flat rate packages under Woocommerce Services for them to be used for size calculations, or is selecting them as a shipping option sufficient?
No need to create boxes for Flat Rate services. If they are enabled as a service, the product will be packed to the box which is associated with a particular Flat Rate service automatically.
