For anyone with this issue, the problem is under settings > writing > theme enhancements. If you enable optimize your site for smartphones it will turn on the jetpack default mobile theme.
I am going to send an email to the jetpack team because this option is confusing/misleading in it’s current state.

I am jumping in with a WSOD courtesy of JetPack as well. I sent a support inquiry about this directly. Should be interesting to see their feedback.
Oddly, it was JetPack monitoring that told me my site was down in the first place this evening.
