That would cause content to be missing – the mobile theme uses a completely separate set of templates, so any custom code you’ve loaded into your desktop theme won’t get loaded.
WPtouch Pro supports custom themes and child themes, which would let you add the necessary output code for your custom fields.

I’m sorry you feel disappointed with our plugin. It sounds like there might be two issues going on on your site that could be quickly resolved:
1. You have comments enabled on your pages (it’s an unfortunate old WordPress default). You can find steps to quickly and easily turn off discussion on pages here: http://www.wpbeginner.com/plugins/how-to-turn-off-or-disable-comments-in-wordpress-pages/.
2. If you find that the mobile theme is not applied when you access the page, you may have a cache system running (either a plugin or at the server level) that needs a configuration tweak. If you share your URL, we’d be happy to take a look and see what we can recomment.

Were any other updates applied at the same time as WPtouch?
WPtouch 4 saves settings as you work – no save settings button needed!
That is being added by WordPress based on your pages’ discussion settings. WordPress has unfortunately enabled this setting by default and you will need to turn off comments on your existing page records.
You can do this quite simply through the bulk edit feature in the ‘all pages’ listing:
– Click the checkbox in the header row (beside “Title”)
– Choose “Edit” in the “Bulk Actions” pull down and click “Apply”
– Change the “Comments” pull down from “No Change” to “Do not allow”
– Click “Update”If you have multiple screenfuls of listings you will need to advance to the next page and repeat the above steps (repeating as needed for however many pages there are).

WordPress’s menu editor unfortunately doesn’t allow additions to the menu options, only a wholesale replacement of the menu item interface.
Temporarily disabling menu icons in the WPtouch settings will allow your other plugin’s menu options to be controlled.
This limitation of WordPress applies only to the admin interface – any configuration you may have set for your other plugin will continue to be applied even if WPtouch’s menu settings are being displayed.

Please try disabling that plugin to see if the issue resolves itself.
It sounds like a component of your site may be blocking AJAX requests to the server, most likely WordFence. Please try switching its AJAX filtering to ‘learn’ mode, then reattempt the setting change in WPtouch. It should go through and WordFence should learn that those are legitimate requests.
You can then switch off WordFence’s ‘learn’ mode.
