It seems that on your site, right-clicking and inspecting elements are both disabled. Thus, it’s a bit hard to tell where the issue lies without looking at the underlying CSS.
Is it possible to temporarily remove these restrictions for us?

I’m selling product A (shipping class is set to Fragile) and product B (shipping class set to Normal). I want product A to be shipped only by Shipper A, which I trust for fragile products, and not by Shipper B, who breaks literally everything he touches.
Since you’re using shipping classes, you could consider using an extension that limits the shipping methods shown during checkout based on the product shipping classes.
We have the Conditional Shipping and Payments extension that offers this option. You can read more in the documentation – shipping methods conditions but feel free to create a presales ticket if you have any questions.
A third-party alternative that advertises similar features is https://wordpress.org/plugins/conditional-shipping-for-woocommerce/.

Now … I have created a 5th zone for sending by Moto Courier for CABA and Buenos Aires, sectorizing Buenos Aires by ZIP codes. However, it does not show me this option at the end of the purchase. He only shows me the ones from the Argentine Mail.
Normally, WooCommerce will select a shipping zone on a first match basis.
Therefore, if you’d like priority to be given to the fifth zone you just created, you will want to move it upwards in the WooCommerce → Settings → Shipping → Shipping Zones list. Customers who are not in the zip codes for this shipping zone will be matched with the lower zones.
Just a suggestion, for better control of the shipping methods shown to customers during checkout, consider using a plugin that can select certain shipping methods based on conditions like product, shipping class, zip code, etc.
We have the Conditional Shipping and Payments extension that offers this option but feel free to search around for similar plugins.I hope this helps.

There are a few things we’d like to figure out in your setup. We’d appreciate if you could do the following checks sequentially and share with us what you find.
1. Regarding the message “You need a higher level of permission. Sorry you are not allowed to edit this item.”
It seems that for some reason you might be missing some permissions an admin should have. You’ll want to check if your admin role still has all permissions.
Kindly install the User Role Editor plugin then go to WP-Admin → Users → User Role Editor. From there, select Administrator in the dropdown and check if all permissions are ticked. If not, tick the empty checkboxes for this role and save.2. Regarding the other issue on auto-assigned categories that you cannot remove
* Be sure to carry out step 1 before this step then test whether you can manage categories assigned to products. If not, proceed with the steps below.
You’ll want to check if this is caused by some other tool (plugin or theme) that you’re using on your site. Kindly do a full conflict test to see if you can narrow down to the culprit.
