I have 3 sites on 7.5.0. They were all updated to 7.5.1 not to version 7.6.1.

Version 7.5.1 is the patched version of 7.5.0, so it would make sense why you’ve been updated to that version. Therefore, kindly don’t roll back to 7.5.1, but if you can, update to 7.6.1.

How do I specify which products I want to appear on WooCommerce? I can’t see any sales channels option to enable/disable WC in Square.
If your Sync Setting is set to Square, once you click to import your products from Square, ALL products that have an SKU in Square (and that don’t already exist in WooCommerce) will be synced over to WooCommerce.
When your products are synced to WooCommerce, you can control which ones should be shown using the catalog visibility options on the product page – https://d.pr/i/WQRlBp.
Setting this to “hidden” hides the product from your store unless a customer has a direct link to the product page. On my test site (set to sell to Argentina only), I tried refreshing several (10+) times on the checkout page, but still, the county dropdown was always shown. This is the expected behavior.
It appears that the issue you’re facing on your side, where the state/country dropdown occasionally disappears, might be challenging to troubleshoot due to its sporadic nature. However, I’m glad to hear that you’ve found a workaround by listing more countries to sell to.
Just a tip, if you don’t intend to sell to those additional countries, you could create for them a shipping zone and add no shipping methods to it. Customers will be unable to checkout (unless they only have virtual products added to cart) since they won’t have a shipping method.

To clarify, we’ll be happy to continue helping out here, but without registering an account on your site. So, for your site’s security, do not upgrade roles for any users that may sign up claiming to be “support”.
That said, I tested this on a new test site and I can see that when Argentina is selected as the country I sell to, I can access the State/County dropdown – https://d.pr/i/98hS8w.Since we’re unable to replicate this issue, it looks like something on your site (theme/plugin/custom code) might be causing the unexpected behavior.

I understand you’re facing some challenges with purchases if one ticks the option to save their payment information.
Just to confirm:
- Does this only happen with Stripe?
- Is there an error shown on the checkout page? Could you share with us a screenshot of the error? (Please be sure not to include personal information present on the checkout page)
- Does the same issue come up if one saves a card in their My Account → Payment methods section?
- Is an order created in these instances? If yes, could you share with us the order notes?

There was a bug in Square version 3.9.0 that caused this issue, and I understand that it’s caused inconveniences, especially with regard to inventory sync. Our developers have fixed it and we’re looking forward to its release, likely in the next Square version.

WooCommerce does this by default – the default payment method shown on checkout is the first one in the WooCommerce → Settings → Payments list. However, if you’ve previously selected or made a purchase using another payment method, that method will be selected instead.
To confirm if the default behavior is working as expected, could you either (a) clear cookies and site data OR (b) open an incognito browser window and try to checkout?
As per your current settings (https://d.pr/i/9cWcOx), “Cash on delivery” should be selected as the default method during your checkout attempt.
