The link can’t be removed yet, but you can replace the automated excerpt by your own custom message by adding a custom Publicize message in the box appearing right above the Publish button in your post editor.
In the future, we’ll provide more options to allow you to customize those posts. You can follow our progress here:

I’m afraid that’s not possible. The name is added by Facebook because you’re posting to your Facebook Page from a third-party app. Right now, that app is the same for everyone using Jetpack’s Publicize module. It’s named “WordPress”, and we set it up, maintain it, and make sure it works even when Facebook makes changes to its API.
If you wanted to use your own app instead, with a name you choose (it could then be your website’s name), you would have to create a Facebook developer account, create the app, and then link it to your site. That’s not an option with the way Publicize is currently designed; we’ve chosen to create and handle the app for you, so connecting your site to Facebook is as easy as possible.
If you feel comfortable enough to go through those steps on your own, you could try the SNAP plugin. While the connection is more complicated to set up as you’ll need to create an app and configure it, you will have more control over the look of the updates on your Facebook page.
I hope this helps.
