Any tips if I want to write code that needs a list of users according to what values are set in an extra profile field?

This should get you in the right direction: http://generatewp.com/wp_user_query/

However, please note we only support custom fields in the Hobbyist and the Pro version, and the Pro version also has an user listing addon: http://www.cozmoslabs.com/docs/profile-builder-documentation/add-ons/#User-Listing_shortcode
