In most cases, this kind of problem is caused by conflicts between the tools that you’re using (plugins or theme).
Thus, I would recommend that you do a conflict test and check if you can narrow down to the culprit. Here’s the conflict test guide – https://docs.woocommerce.com/document/how-to-test-for-conflicts/.
* If the conflict test does not yield a culprit, could you please share a copy of your site’s System Status? You can find it via WooCommerce > Status. Select “Get system report” and then “Copy for support”. Once you’ve done that, paste it here in your response.

I tested detail again, deactivate all plugins except woocommerce, and problem not solved.
I delete all tags and two categories, add new products and assign one category, press Update it assigned to this one and also one other. Always do it just if select mentioned category, If select some other not assign more categories. Don’t know if categories has some hidden features. Also in Tools clear cache, orphans…

Thanks for sharing your System Status.
The problem you are having is really a bit unusual. I can’t replicate it on my test site and when I add tags everything works fine.
Does it work if you hover over the product, click on “Quick Edit” and add the Product tag there?
Also I seen if change some on existing tag (for example description) got ‘You need higher level permission…’ and add dozen same tags in list.
Please clear your browser’s cache and cookies or use a different browser, and make sure you have Administrator rights.

My woocommerce in any case work very strange. For example if add new Category I see inside already more products what also stay in other category. When open Product and try remove from unwanted category (by selecting check box) after Update product situation stay same. Can not control category for some products (not all). It is engage a lot time to correcting, but not accept.
I really suppose my MySQL DB and tables inside make problems. I need tell after maybe 50 products defined, I change URL from http://www.e-stan.eu/shop to https://www.e-stan.eu
Maybe it is source of problems. In DB table Posts I look more GUID column as:
http://e-stan.eu/shop/…..
Maybe need all this replace in https:// and remove /shop from URL

These are some strange problems and I will recommend that you check for any server-side caching problem on your site. You can contact your host to disable or clear any cache. Also, you can ask for the server error logs to figure out what are the main problems causing these uncertain problems.

This is a good point. How did you actually make the changes to the URL?
If you have updated following any of the methods explained here: Changing The Site URL you should not have problems with it.
You can also the Better Search Replace plugin to replace specific content from the database.
Maybe need all this replace in https:// and remove /shop from URL
SSL/HTTPS seems to be working properly on your site. You can use the Really Simple SSL to look for any active issue and mixed content problem on the site.
Please give the suggestions a go and hopefully, you will be able to get to the solution of the problem.
