Also, tried switching to twentytwentyone, to see if it was the theme and still nothing showed up. I guess I need to attempt to disable all plugins. But am unable to at this moment, will update this when I can.

We suspect that there might be third-party plugins installed on your site that could be breaking the course page template.
You can use troubleshooting mode from https://wordpress.org/plugins/health-check/ to disable all plugins, only in your user session. You can then enable just Sensei LMS to isolate the causes. This greatly helps you with the troubleshooting process without affecting the public view. However, since you are working in a development copy, you could directly disable all the plugins.
Let us know how disabling the plugins goes.
So, this is fixed now. Not sure what ended up being the fix. But the courses are showing on the archive page. Also was not able to navigate to the “my-courses” page before, but that is also fixed now.
I disabled all the plugins and re-enabled them one at a time until there was an issue. But I was not able to find any plugins directly causing this issue.
Also noticed that I was having a loopback request error, which may have actually been the issue. The only problem with that is all the domains were already added hosts file for 127.0.0.1 but nothing for ::1. So I added this to the hosts file as well, but was still getting a loopback request error.
Noticed that Site Health said I was missing the bcmath PHP module. So I installed that and restarted the web server. Still was getting a loopback error.
I kept messing with the plugins, disabling everything. Switched to a default theme. And started re-enabling plugins. Somehow the loopback request error went away.

Usually, these type of errors are related to a plugin not being updated or a plugin conflicting with Sensei.
