When you have enabled the automatic item update option in Google’s Merchant Center Google will check if your product prices and availability in your product feed match the structured data markup on your landing pages. When they do not match than Google will change the price and availability of your product feed into what it found on your website. Now, it appears you have the automatic item update option enabled and Google cannot find the availability structured data markup on your landing page so it can’t check if it matches with the availability in your product feed.

I read the support provided by google but I am not sure how to setup these structure data markup. I assume this is already prebuilt within the core of our pages? All I have to do is create a feed with the plugin and upload it onto google merchant center. Am I the only one having this problem?
Read something about schema rich snipet but not sure if it has any relevance to this problem.
Yes, WooCommerce “out of the box” comes with structured data markup on the product pages. However:
1. It is faulty for variant products causing Google to disapprove products in your merchant center because of a price mismatch between the price in your product feed and the price in your structured data markup;
2. Lot’s of theme’s change or remove the structured data mark-up completely.
You can check if there is structured data markup on your pages (and if it is correct) using Google’s structured data testing-tool: https://search.google.com/structured-data/testing-tool

So how do I go about fixing this issue? I can’t believe I am the only one that has this problem. Cant find a solution on google search.
I gave you some pointers in my previous answer. You need to figure out if there is structured data markup on your product pages using Google’s testing tool.
When there is not than most likely the theme you are using is removing it or you are using some sort of plugin that removes/changing it.
So, make sure you have the default WooCommerce structured data markup (back) in place,
