Using Custom Post Type UI, I created a custom post type. I set the Capability Type to ‘page’. When I edit one of my custom post type, I would expect to see a dropdown for Page Template, like in a classic post type page, but I don’t. Where did I go wrong?

I believe the capability type setting relates to user capabilities for the post type, not post type features.

This is untested, but you could check out http://wordpress.org/plugins/custom-post-type-page-template/ and I wager there are other plugins that do similar things.

You also could use the template_include hook, more information at http://codex.wordpress.org/Plugin_API/Filter_Reference/template_include
