Thanks for that but I’d already been through these steps though on a couple of sites first. The issue only seems to have arisen since WP updated to version 5.7 and the only way I found to fix this was to manually roll the WP version back to 5.6. I’ve even tried deleting and re-installing the plugin but had no effect.
I’d appreciate your thoughts.

Did you install an SMTP plugin yet? If not could you please do so – and I would recommend one that has message logging. Personally, I use a free plugin called “Post SMTP”.
With this installed & configured, could you please submit a test entry into your form and then check the SMTP logs. Do you see HTML in the message logs? If not, this is happening after the message leaves your website and you should look into your general email deliverability.

Sorry, mega busy so not had time to go through the Post SMTP as it would require setting up an external API. However, I did quickly try the WP Mail plugin and set to send via PHP and that seemed to solve the issue so not sure if this is related to WP core as my hosts say no changes have been made to SMTP servers at their end.

Post SMTP does not require an API though – it will connect to a standard SMTP server the same way that the WP Mail plugin does. If you have any issues in the future I would recommend switching, as the message logging is very useful to debug things like this.
