Yes, there are indeed filters in the plugin, which allow you to add changes in safe manner, but since there are quite a few, I will have to ask you to be a bit more specific on what you would like to achieve (exactly, so I can give you the exact filter/hook name)

yes, the premium versions both have extra (custom) fields, amongst which a country select (more info: http://www.cozmoslabs.com/wordpress-profile-builder/?utm_source=cozmoslabs&utm_medium=banner&utm_campaign=top-banner#profile-builder-features)
However, if you want to add your own custom fields, you can use the built-in filters, but you will need to do quite a bit of coding.
