I regret to inform you that Event Tickets does not have a restore functionality for deleted RSVP attendees, at this time.
However, I can see your point of having this functionality, which might be useful for other users, too. Since we are a customer-driven platform, I have shared this with our product team for consideration on our future roadmap.
