Converting an email to a post

I’ve not tried it but take a look at this option in Jetpack.

In theory a user could have the email address changed to send to the assigned one for publishing. Keep in mind that for a commercial site, a paid subscription is required.

You don’t need a plugin for this. WordPress already has this feature built in. Take a look at Settings > Writing. There, you can enter the login credentials for an email account, and emails from that account will then be saved as posts in WordPress.
