By default in WooCommerce there is no EAN field to the products. It is likely that this field will be stored in the database as metadata if you added it using a third-party plugin. Exporting and importing of product metadata is one of our premium features. If you want to export or import this data, please look at the pro version plugin.

l’esportazione standard dei prodotti tramite woocommerce consente l’esportazione di tale campo. prima di acquistare il plugin vorrei avere la certezza dei campi esportabili perchè oltre il campo ean manca anche il campo della breve descrizione.

Yes, the pro version plugin supports exporting the EAN field along with other product details.
Regarding short description, both the plugin versions supports this field. You can find this field in the post_excerpt column of the export CSV file.
