There are different templates in this plugin to choose.
Please check Description tab (http://wordpress.org/plugins/nimble-portfolio/)
all templates are stored in templates/ folder inside our plugin folder.
each sub-folder in templates/ is a template with a template code is set to its name.
In each template folder there 2 main files, template.php and template.css
template.php is responsible for layout.
template.css holds the CSS to use in the template. You can change the CSS here.

If I was to create a plain white background image and load to the template image folder, can I simply delete any references to the image in the template.css file? Or do I need to update the code in a better way?
I was going to delete this section of the code and hope that it resolved my issue! .nimble-portfolio-rollerbg{background-image:url(images/pitemlbg.png);background-repeat:no-repeat;width:216px;height:217px;display:block;background-position:top}
