Yep. Just got it working properly. In SF, go to Setup -> Customize -> Leads -> Web 2 Lead and REMOVE “default response template” then save.

I logged out of wp-admin, closed browser, cleared cache, logged in again and I was able to de-select “allow user to send a copy”. However, I keep getting a task created and a mail sent to the original poster. Checking with the default SF user to see if they have auto-response, triggers, workflow that may be causing this.

Looks like setting both options solved it, thanks!
Now just need to figure out why a task gets made and email goes back to the original poster saying there is a new Salesforce lead!
