The only solution I found was to switch from the All in One SEO plugin to the Yoast SEO plugin. This worked.

In reply to: [All In One SEO Pack for WooCommerce] Woocommerce CategoriesHelp – Does anyone know!
Yes, we’re hoping to release before end of March.
Is there any further update on this?
What I don’t understand is that the woocommerce product category pages allow meta data to be added – but when I hit update and return back to the product category – it has not saved the meta data!
Is there a way to hardcode the meta title/description onto the product category pages?

In reply to: [WP Catalogue] Adding Meta DataI’ve now resolved the issue and can now edit all META data within WP Catalogue.
Using All in One SEo Plugin – you must:
1) Enable custom post type settings
2) Enable advanced options
3) Checkoff WP Catalogue from: “SEO on only these post types”
4) Update OptionsForum: Plugins
In reply to: [WP Catalogue] Adding Meta DataThanks for your input Maeve, I really appreciate it.
I use the All in One SEO Pack Plugin which actually does allow me to write the META description and META Keywords for the catalogue page – however, The META Title (the most important according to Google!), is not overwriting what your plugin injects by default – which is the Product Name.
Is there a way to disable the Product Name becoming the META Title for the page?
Thank you again
