I had same question, and solved like this,
$submission = WPCF7_Submission::get_instance();
$ip = $submission->get_meta( 'remote_ip' );
See “contact-form-7/includes/mail.php” for other tags.

I understood how the list works.
I’ll consider Premium.
(If possible, I am happy if I can name backup files like “example_com” instead “non_alpha_name”. I’d appreciate if you consider it.)
