Well, after looking all over the web, I found an article on how to do something similar to this with Jigoshop and figured out how to make it work with WooCommerce. I had to add a code snippet to my Functions.php to get WP-PageNavi to work with WooCommerce to replace the default Next/Previous links on the Product Archive Pages.
