Problem solved! I can upload images and generate thumbnails. Not sure how this solution came about, other than waiting for a few days to do my uploads.
Just found the answer to the above question. You can indeed make the thumbnails bigger. In the NextGEN dashboard, go to Options -> Thumbnails, then tweak those dimensions.
