I’m not quite sure that I understand your question.
Do you want to prevent updates? If so, you need to install EUM and turn off updates. Uninstalling it will revert back to WordPress default behaviour and it won’t prevent updates.If this is not the issue, could you please explain further? Thanks

From the error message, I see that some plugin is blocking / altering access to REST API which is used to save settings options. You need to deactivate all plugins and then activate one by one to see which one is causing problem.
That said, We are working on a solution (switching back to admin-ajax, rather than using REST API). I’ll let you know, when the update is released. Thanks for your patience.

Could you please open developer console (F12 or Shift+Ctrl+I) and see if there is any error displayed? You can also try to deactivate other plugin one by one to see which one is causing problem. If any one of your plugin is redirecting or blocking request to REST API calls, then it is possible that you can’t save any option in General tab.
Let me know, what you find.
