So I had the same issue. Hopefully this works for you. I re-enabled the Gutenberg editor and edited the checkout page.
In Editor mode, I then converted the page back to ‘Classic Checkout’, saved the page, disabled the Gutenberg editor and all my additional fields were now showing again.
This has taken me about 24 hours to suss out the issues with WC 8.7.0!
