I have installed Woocommerce Booster plugin to solve this issue.
Even though the order id in the “Orders” section has not changed / mended it’s ways, the Booster plugin allowed me to allocate Custom Order numbers, eg., #ud1 as the 1st order. All subsequent order numbers now are increasing sequentially

Yes Anphira, if SMTP is the way to go, then I will use it in the actual website where I had this issue.
Just one question, any reason for choosing WP Mail SMTP plugin over Postman SMTP?
