That sounds really complicated. From what I can gather from your description, that would probably require some custom coding.
For the filter, have you taken a look at User Tags? You could set a maximum number of selections. It’s pretty useful!

What are the words? Default?

Admin > Ultimate Member > User Roles > Choose User Role
Where does the redirect go to under:
Logout Options > Action to be taken after logout
Is it to a custom url?
Can I have a link to the website?

I tried looking into this. I changed the settings under
Admin > Settings > General > Date Format.
After registration, the “registration date” field on the profile had not changed. There is no option to change the format of the Date within Ultimate Member that I know of without writing some PHP code.
You may want to contact them directly (either by Trello or their website) to ask about adding an option.

If I remember correctly, I couldn’t get all the information out. I had planned on coming back to it at some point but was too busy at the time. Please let me know if you find anything out from the plugin authors.
