Upon checking, we can see that the field values are shown in the emails sent while changing to Processing order status. I believe that the issue is only on the mail sent by quote that is pending payment.
Even, the default address fields are not displayed in this email.Thank you!

Once WooCommerce add the necessary hooks, we will ensure our plugins are compatible with blocks.

Let me provide answer to your queries separately.

These issues are really strange and look to be site-specific. We are not able to recreate the issue on our local environment. You had given access to your website. But, hard luck that we were not able to access it.

Unfortunately, we were not able to access your website due to this reason we couldn’t fix the issue.

This kind of issue doesn’t occur usually since all the functionalities of our plugin will be removed when the plugin is deactivated.

If so, you can click on the edit button displayed along with the addresses in the order details page and make the changes.

We believe that you might be using WooCommerce blocks on your website due to this reason the changes are not being reflected on the checkout page. Unfortunately, none of the plugins that customize the checkout page is not compatible with WooCommerce blocks.
Could you please check after creating the checkout page using the shortcode [woocommerce_checkout] and verify whether the changes are being reflected?
