`Could this become a feature?
Theoretically, the products use a calendar. You could set that this calendar assigns only one slot for all products, e.g. with a checkbox.

I need it too:
I offer training packages and have only one trainer. But these packages need different products because they are bundles. Per booking, the trainer is then occupied and can therefore not be booked again on same day.

Or first simpler: A checkbox for setting:
That all slots in a calendar block appointments without product reference. Without knowing how your plugin is built 😀
