Doh, my bad. Even though I had included plugins in my .gitignore, my initial commit had them in the repo – every deploy of my child theme redeployed the plugins too.

Removed plugins (other than than my own) from the repo and all is good.
This thread appears to have died but the problem persists; I get a completed payment with no error but the paypal side still shows the “Adjust cart calculation discrepancy” in the memo.
