It seems like I’ve resolved the problem. It turns out the solution was very simple!
I had prepared the new post I was working on BEFORE the clean-up of my site and the update of the WordPress stuff. The problem seemed to be with the NextGen Gallery, even when I reloaded all the photos.
I resolved the problem simply by opening a NEW post and a NEW gallery. I copy-pasted the text from the old post and uploaded the photos into the new gallery.
The new post works fine.

I only have four plugins (including NextGEN). I’ve tried deactivating them all as per your suggestion, but to no avail.
I notice that the NextGEN inserts in my previous postings appear like this:
[nggallery id=26]
Now, when I insert one, I just get a thumbnail of the first image.
Regarding the bit about “uploading a NextGEN gallery now requires the user to make a choice of format”, what happens is that a pop up window appears with six options under the heading “Display Galleries” (one of five subheadings in the box). I didn’t have this before.

Last week my site was hacked. Bluehost SiteDoctor cleaned it up. Bluehost have reaffirmed that it is completely clean. My computer has also been completely cleaned up.
In WordPress I had already prepared the post I am working on, complete with photos. When I re-entered the site, there were just little pictogrammes inthe draft gallery where the thumbnails used to be. So I removed the pictogrammes and re-uploded the photos. It took ages for each photo to load. Also each time I wanted to save changes, it took several minutes to do so.
The issues only arise with the post I’m working on; existing posts are behaving normally.
